Guilt-Free, Gluten-Free Healthy Chocolate Brownies

The Valentine’s Day is upon us.

If your loved ones are chocolate lovers, they have the perfect excuse to eat all the chocolates their hearts desire.

But if you don’t want to shower them with sugar-loaded sweets this year, why not express your love by making healthy treats that chocolate lovers will definitely enjoy and appreciate?

Not only for your loved one’s health, but also for the environmental health, making your own chocolate is much better than store-bought boxes of chocolate that consists of a heart-shaped package with full of single use plastics! (To me, that is just a shape of heart and actually no heart or nothing in it!!!)

But what should you make?

Chocolate fruit dip?
Chocolate muesli bars?
Chocolate popcorn?

All of these choices are healthier and delicious, but they are not fancy and not for a special day, are they…?

How about a chocolate brownie?

I think this is the one all the chocolate lovers will be happy with and want more on the Valentine’s Day!

Does brownie sound healthy?
Maybe no?

But it is actually healthy!
Because this is not a normal chocolate brownie.
It contains AVOCADO!!!

Avocados are an excellent source of healthy fat, soluble fiber and contain nearly 20 vitamins and minerals such as vitamin C, E, K, and B-6, iron, copper, potassium etc.

On the other hand, chocolate (I’m talking about dark chocolate with 70-85% cocoa) is loaded with antioxidants and minerals.
Some studies have suggested chocolate could lower cholesterol levels and blood pressure, and also prevent memory decline.

With these ingredients combined, definitely this brownie is going to be a healthier sweet that makes your loved ones and their bodies happier!

 

Avocado chocolate brownie : 12 pieces

Prep: 15 mins
Cook: 25-30 mins
Total: 40-45min

INGREDIENTS

(Wet ingredients)
・1 large ripe avocado (peeled and pitted: around 200g)
・140g dark chocolate
*If you like the sweeter brownie, you can use milk chocolate up to 180g
・2 large eggs (at room temperature)
・50g coconut sugar
・1 teaspoon pure vanilla extract

(Dry ingredients)
・20g unsweetened cocoa powder
・60g rice flour
・50g almond meal
・1 teaspoon baking powder
・1/2 cup crushed walnuts (you can use any nuts:peanuts, pecans, almonds etc)

EQUIPMENT
Baking pan : 4evaeco Stack n Nest Food Containers Trio Large
(container size:22cm x 17cm, holds 1800ml)

INSTRUCTIONS

1. Preheat the oven to 180℃ fan forced.
2. Lightly grease the baking pan and line it with baking paper. Set aside.
3. Place chocolate in a heatproof bowl over a saucepan of simmering water(50-55℃) and stir with a spatula. Once it melted, remove the heat. Set aside.

4. Add avocado in a medium bowl and mash with hand blender.
*You can also use food processor instead.
5. Add coconut sugar, melted chocolate and eggs into a bowl, mixing continually as each ingredient is added until completely smooth and combined. Set aside.
6. Sift almond flour, rice flour and cocoa powder into a new bowl. Add baking powder then mix well with a spoon.
7. Add dry ingredients(6) and half of the crushed walnuts into the wet mix(5) and gently fold until just combined.
*Do not over beat as doing so well affect the texture of your brownies.
8. Pour batter into prepared pan, smoothing the top out evenly and top with remaining crushed walnuts.
9. Bake for 25 to 30 minutes or until just set (a skewer inserted in the center comes out with moist crumbs clinging). Set aside to cool completely.
10. Once it cools to the room temperature, remove the brownie out of the pan then cut into square. Now ready to eat!
*Leftovers can be back in the 4evaeco food container used as a baking pan then put the lid on for storing in the fridge or freezer.

 
NOTES & TIPS:
– Brownies get better with age. You can store them at room temperature for 3 days , or keep them in the fridge for up to a week. You can also freeze them for up to 3 months.
To eat the frozen ones, take out of the freezer and leave to thaw. Bring to room temperature before serving.

– Serving with fresh strawberries, blueberries, raspberries and mango would be a perfect match for Valentine’s Day!
