Chicken Cleansing Soup

Being quarantined in the house for weeks is really challenging for all of us.
This might drive you to some bad habits or routines that can affect you later on.
So it is really important to look after yourself by keeping a healthy lifestyle going.

But some people might think how you can do that in this pandemic situation when your options are very limited…

The answer is “You can! By detoxifying your body!”.

Detox / detoxification is about cleansing the blood, flushing waste out of your system and revitalizing your body from inside out.

Originally human body has a sophisticated natural ability to eliminate impurities through your five organs (the liver, kidneys, intestines, lungs and skin) to clear the toxins out effectively and protect you against various diseases. But if you can support these organs’ natural cleansing system by doing detoxification regularly, you are able to maintain optimum health.

So this is what I think you can do,

– Intermittent fasting
– Avoid alcohol
– Drink plenty of water
– Take a lot of stretch breaks
– Brush or massage your body to increase the blood circulation
– Take adequate and quality sleep
– Chew food thoroughly before swallowing to help digestion

But if you want to keep the detoxification moving forward, you cannot forget to refuel your body with healthy nutrients, can you?

So today, I’m going to introduce the recipe that can help you with eliminating toxins.

The main ingredients I use are these three.
1. Turmeric to stimulate liver
2. Cauliflower to support kidney function
3. Lentils to promote digestive system
(more benefits from each ingredient are below)

To make your body’s detoxification system run strong, I’m going to add other ingredients that are rich in antioxidants and anti-inflammatory properties.

I believe you will assist your cleansing system with this recipe and you can stay healthy!


Chicken Cleansing Soup : 4 servings

Prep: 30 mins
Cook: 45 mins
Total: 75 min

*The benefits of each ingredients are below.

・8 chicken legs
・4 Dried shiitake mushrooms / 500ml water for reconstitution
・1L chicken stock
・4 Chinese red dates (jujube)
・8 tablespoons lentils
・300g cauliflower
・25g slices ginger
・20g slices turmeric or 1 teaspoon turmeric powder
・2 cloves smashed garlic
・Goji berry
・Fresh coriander leaves
・2 tablespoons olive oil
・kosher salt

(Spice rub mix)
・2 teaspoons grated ginger
・1 clove grated garlic
・1 tablespoon cumin powder
・1 tablespoon curry powder
・1 tablespoon Chinese five spices


1. Prick chicken using a fork.
2. Season the chicken well with salt and pepper.
3. Mix all the spice rub ingredients and rub the spice mixture all over the chicken and let sit for 1 hour.
4. To reconstitute dried shiitake mushrooms, soak in 500ml hot water for 15 minutes and set aside.
*Do not throw the water after the constitution. The water turned brown with rich umami is used as broth with chicken stock later.
5. Heat the pot to medium-high heat and add olive oil. Cook both sides until chicken is brown.
6. Reduce heat to low and add all the leftover spices used for the spice rub. Fry for a couple of minutes. Pay close attention not to burn the spices.
*Frying spices enhances the original flavors of spices, bringing brighter and fresher aroma.
7. Pour (4) and chicken stock in the pot. Add dates, lentils, smashed garlic, sliced ginger and turmeric and turn the heat on high until the water starts boiling.
Skim the impurities off the top.
8. Place the lid on and turn the heat to low. Simmer for 30-40 minutes or until meat starts falling off the bone.
9. Add cauliflower and cook for another 5-10 minutes.

10. Add salt and pepper to taste.
11. Ladle the soup into bowls and scatter over the coriander leaves and goji berry. Ready to eat!
